Line a silicone mat/mold with plastic wrap or parchment paper. Melt 100 grams of chocolate in a pot and pour it on the mold. Make sure the chocolate is even. Freeze the chocolate while doing the filling.
In a bowl mix well cream cheese, peanut butter and cookie butter. Taste the filling and add PB or cookie butter to your liking. You can also add some salt to the filling and skip salt on top of the squares.
Take the chocolate base out of the freezer and add the filling on top. Make sure the filling gets to the ends as well as is about even. Put it to the freezer again to set.
In a pot melt the rest of the chocolate. Once there's no lumps in the melted mixture, take the mold out of the freezer and pour it on top to cover the filling. You need to move quite quickly because the filling is set and the chocolate will harden faster.
Once the chocolate on top has harden in the freezer, you can then cut it to smaller bite sizes. If you didn't add the salt on the filling, you can sprinkle some pinch salt on top of the squares.
