Gingerbread Raspberry Meringue Roulade; Gastro Series
I created this meringue roulade recipe for K-Ruoka contest. They had a contest for creating different Christmas related recipes. I wanted to participate because I have never tried anything like this. So the contest was simple, you wrote your recipe and contact information to a form. They then might contact you and use the recipe in the “Mitä tänään syötäisiin?” TV show in MTV and also the recipe might end up to the K-Ruoka’s recipe bank (of 8000 recipes) on their website.
Safe to say I didn’t make the cut. I think this recipe might be a little bit difficult to do in a short airtime and also I think they were looking something else. I think my recipe wasn’t festive enough but still this was good in my opinion.
Gingerbread Meringue Roulade
Light and airy meringue roulade for the festive season.
- 6 egg whites
- 255 g sugar
- 1 tbsp corn starch
- 1 tsp white wine vinegar
- 1 ginger bread quark
- 2 dl double cream
- 1 tsp vanilla extract
- 1 tsp nut meg
- 1,5 dl raspberries
- 2 tbsp water
- 2 tbsp sugar
- 1 tbsp lemon juice
- 3 dl coconut flakes
I think this is really good alternative for the regular roulade. This festive dish can also be made with loads of different fillings and decorations. Meringue roulade is quite simple to do, the most difficult part is to get the sugar melt to the meringue by whisking it until the mixture is smooth. I suggest that you use caster sugar or stand mixer to make it easier.
