
Cookies and cream cheesecake
This is the season’s recipe for the Holiday coffee table or something sweet to offer in get-togethers. Cookies and cream is something that almost everyone likes. It’s sweet, chocolatey and creamy as well as has hints of vanilla in it. This cheesecake is really easy, quick, no-gelatin and no-bake. For decoration you can use whole cookies, crushed cookies or for a change fruits of your liking. For stress-free baking this cheesecake is the answer. 😉

Cookies and cream cheesecake
Something really delicious to offer in the coffee table at Holiday parties or get-togethers. This recipe doesn't contain gelatin and also it's no-bake cheesecake.
Ingredients
The crust
- 1 pkg Cookies Domino, Oreos etc.
- 30 g butter
The Filling
- 1 pkg Philadelphia cream cheese
- 1 pkg Mascarpone
- 2 dl Whipping cream
- 1 tbsp Icing sugar
- 1 tsp vanilla sugar
- 0,5 pkg Crushed cookies
Instructions
The crust

Prep the cake tin with parchment paper. Blend or crush all the cookies in a mixer/bowl. Save part of the crushed cookies for the filling.

Melt the butter and mix in to the crushed cookies. Push the mix to the pan and fridge to set.
The Filling

Whisk the whipping cream with icing and vanilla sugar.

Soften the cream cheese and mascarpone together.

Whisk gently the whipping cream, crushed cookies and cream cheese mix.

Take the crust from the fridge and add the filling on top and smooth the top. At this point you can add some decorations, if wanted. Set in the fridge for 2 to 4 hours before indulging.
