Have you made Carmelitas? This recipe is new for me, although these are not the basic carmelitas, I can imagine myself recreating these over and over again with coconut flour or regular flour. I was actually out of flour and I wanted to experiment with coconut flour that I had in my cupboard. I used organic coconut flour that I had order from Amazon a while back when I tried the ketogenic diet.

This easy crumble is the perfect solution for making something easy and fast with few ingredients. It is suitable for vegetarians. 🙂

Coconut Chocolate Carmelitas
Crumbliest Coconut Chocolate Carmelitas with Caramel filling. This recipe is suitable for vegetarians.
Ingredients
- 200 g Organic coconut flour
- 17 g SteviaSweet (or other sugar substitute)
- 70 g Rolled oats
- 2 tbsp Vanilla extract or vanilla sugar
- 1 tbsp Baking powder
- 200 g Salted butter
- 150 ml Almond milk
- 400 g Condensed milk Caramelized
- 40 g Dark chocolate chips
- 50 g Crushed almonds
Instructions

Preheat oven to 200°C/400°F and line a square cake pan and grease lightly the sides.
Base

In a bowl add the coconut flour, stevia, oats, vanilla extract, baking powder and mix to combine.

Add butter to the mixture (butter needs to be room temperature) and work it in with hands until the mixture is crumbly.

Take about 1/2 cup of the mixture aside to smaller bowl. (Which is used for the top.)

Add the milk to the bigger mixture and combine well.

Pour the bigger mixture in to the cake pan and press lightly to reach all edges. Bake for 15 minutes or until golden.
Filling

Add with spoon condensed milk to allover the baked base and also sprinkle the crushed almonds to the top.

Sprinkle the dark chocolate chips on top of the condensed milk and crushed almonds.

And lastly add the remaining crumble to the top.
Bake and enjoy

Bake for 15 minutes or until the top is golden. Cool for about 15 minutes and enjoy the delicious crumble with coffee.

The organic coconut flour that I used was from the brand Vita2You (from Amazon), but there is lots of other brands as well.
